Ingredients:
– 9 lasagna noodles
– 2 cups cooked chicken, shredded
– 2 cups ricotta cheese
– 2 cups mozzarella cheese, shredded
– 1 cup grated Parmesan cheese
– 4 cups white sauce (see recipe below)
– 2 cups spinach, fresh
– 1 tablespoon olive oil
– Salt and pepper to taste
– 1 teaspoon garlic powder
– 1 teaspoon Italian seasoning
Directions:
– Preheat your oven to 375°F (190°C).
– Cook the lasagna noodles according to package instructions; drain and set aside.
– In a large mixing bowl, combine the shredded chicken, ricotta cheese, garlic powder, Italian seasoning, salt, and pepper.
– In a baking dish, spread a layer of white sauce on the bottom.
– Place 3 lasagna noodles over the sauce, followed by half of the chicken mixture, half of the spinach, and a layer of mozzarella cheese.
– Repeat the layers: white sauce, noodles, remaining chicken mixture, remaining spinach, and more mozzarella cheese.
– Top with the final layer of noodles and pour the remaining white sauce over the top.
– Sprinkle grated Parmesan cheese on top.
– Cover the dish with aluminum foil and bake for 25 minutes.
– Remove the foil and bake for an additional 15 minutes, or until golden and bubbly.
– Let it cool for 10 minutes before serving.
