🧾 Ingredients:

For the Fritters:

  • 3 medium potatoes, peeled and grated (about 450g / 1 lb)

  • 1 cup corn kernels (fresh, frozen, or canned – drained if canned)

  • 100g (1 cup) shredded cheddar cheese

  • 1 small onion, finely chopped

  • 2 large eggs

  • 1 tablespoon all-purpose flour

  • Salt and pepper, to taste

  • Optional: 1/2 tsp paprika or garlic powder for extra flavor

  • Oil, for frying (vegetable or canola oil works great)

  1. Prep the potatoes:

    • After grating, place potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial for crispy fritters!

  2. Mix it up:

    • In a large bowl, combine the grated potatoes, corn, cheddar cheese, chopped onion, eggs, flour, and seasonings. Mix well until evenly combined.

  3. Heat oil:

    • In a large skillet, heat about 1/4 inch of oil over medium heat.

  4. Form fritters:

    • Scoop about 2 tablespoons of the mixture and flatten it slightly into a patty. Carefully place into the hot oil.
