1 lb (450g) chicken breast, cut into strips
3 medium potatoes, peeled and chopped
1 large carrot, shredded
1 small onion, finely diced
2 cloves garlic, minced
2 tbsp tomato paste or grated tomato
1 tbsp olive oil
1/2 cup chicken broth or water
1 tsp dried herbs (thyme, parsley, or mixed)
Salt & pepper to taste
