Greek Chicken Gyros with Cucumber Tzatziki 🐔🍞

🛒 Ingredients
For the Chicken Marinade:
1 ½ lbs boneless, skinless chicken thighs
 
¼ cup olive oil
 
2 tbsp lemon juice (fresh is best!)
 
2 cloves garlic, minced
 
1 tsp dried oregano
 
Salt & pepper, to taste
 
For the Tzatziki Sauce:
1 cup Greek yogurt (plain, full-fat preferred)
 
½ cucumber, grated and squeezed dry
 
1 clove garlic, minced or grated
 
1 tbsp lemon juice
 
1 tbsp olive oil
 
1 tbsp fresh dill (or 1 tsp dried)
 
Salt to taste
 
For Serving:
Pita bread or flatbreads
 
Sliced tomatoes, red onions, and lettuce
 
Optional: crumbled feta, olives, or a sprinkle of paprika
 
👨‍🍳 Instructions
1. Marinate the Chicken
In a bowl or zip-top bag, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.
 
Add chicken thighs and toss to coat well.
 
Marinate in the fridge for 30 minutes to 4 hours (longer = more flavor!).
 
2. Make the Tzatziki Sauce
Grate cucumber, then squeeze out excess moisture using a towel or cheesecloth.
 
In a bowl, combine Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt.
 
Mix well and refrigerate until ready to serve (the longer it sits, the better it tastes!).
 
3. Cook the Chicken
Heat a grill pan or skillet over medium-high heat.
 
Cook chicken for about 5–6 minutes per side, or until nicely charred and fully cooked.
 
Let it rest for a few minutes, then slice into strips.
 
4. Assemble the Gyros
Warm your pita bread.
 
Spread a generous layer of tzatziki, then top with sliced chicken, veggies, and any extras you like.
 
Wrap it up and devour!

Wrap the gyro in foil or parchment to keep everything together — just like the real deal from a Greek street stand!
