Grilled Chicken with Rainbow Veggies Bowl 🍗🌈

Colorful, clean, and full of smoky, grilled goodness!
📝 Ingredients:
1 boneless chicken breast
1/2 cup zucchini, chopped
1/2 cup yellow squash, chopped
1/2 cup carrots, chopped
1/2 cup bell peppers, chopped
6–8 asparagus spears
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt & black pepper to taste
Optional: fresh lemon juice for finishing
🍽️ Directions:
1️⃣ Marinate the Chicken:
Rub chicken with 1 tbsp olive oil, garlic powder, Italian seasoning, salt, and pepper. Let sit for 10–15 minutes.
2️⃣ Prep the Veggies:
Toss zucchini, squash, carrots, bell peppers, and asparagus with remaining olive oil, salt, pepper, and seasoning.
3️⃣ Grill Everything:
Preheat grill or grill pan to medium-high. Grill chicken for 5–6 minutes per side or until cooked through. Grill veggies 5–8 minutes, turning occasionally, until lightly charred and tender.
4️⃣ Slice & Plate:
Slice the grilled chicken and arrange with veggies on a plate.
5️⃣ Serve It Up:
Optionally drizzle with lemon juice or sprinkle with herbs for extra flavor.
