For the Chicken:

  • 2 large chicken breasts, butterflied

  • Mozzarella cheese (block or string cheese, cut into thick sticks)

  • Salt & pepper to taste

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp chili powder (optional for heat)

For Coating:

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 tbsp milk

  • 2 cups crushed cornflakes or panko breadcrumbs (extra crispy!)

  • 1 tsp seasoning (paprika, garlic powder, salt)

For Frying:

  • Oil for deep frying (vegetable or canola)

Optional:

  • Drizzle with Buffalo sauce, hot honey, or sriracha mayo for a spicy kick

1. Prep Chicken:

  • Butterfly each chicken breast and pound it thin.

  • Season both sides with salt, pepper, paprika, garlic & onion powder.

  • Place mozzarella in the center, fold the chicken over, and secure edges with toothpicks or wrap tightly with plastic wrap and chill (optional for shaping).

2. Breading Station:

  • Dredge stuffed chicken in flour (shake off excess).

  • Dip in whisked egg + milk mixture.

  • Coat in crushed cornflakes/panko with seasoning.

3. Fry It Up:
