For the Smash Patties:

  • 1.5 lbs 80/20 ground beef (for juicy patties)

  • Salt & pepper

  • Optional: garlic powder or onion powder

For the Toppings:

  • 8 slices thick-cut bacon, cooked until crispy

  • 4 slices melt-friendly cheese (like white American, provolone, or pepper jack)

  • 4 soft burger buns, toasted

For the Sauce (copycat burger sauce):

  • 1/2 cup mayo

  • 1–2 tbsp Dijon mustard

  • 1 tbsp ketchup

  • 1 tsp smoked paprika or chipotle powder

  • 1 tsp pickle juice or vinegar

  • Dash of hot sauce (optional)

  • Black pepper to taste

1. Make the Sauce

  • Mix all sauce ingredients in a bowl until smooth. Taste and adjust for heat/sweetness.

  • Set aside or chill.

2. Cook the Bacon

  • Fry or bake bacon until crispy. Drain on paper towels.

3. Form and Smash the Patties

  • Divide beef into 4–8 loosely packed balls (double smash = 2 per burger).

  • Heat a griddle or cast iron skillet on high.

  • Place beef balls on the hot surface and smash them flat with a spatula or burger press.

  • Season with salt & pepper.

  • Let them cook undisturbed for 2–3 mins to develop a crust.

4. Flip and Add Cheese

  • Flip patties and immediately top with cheese.

  • Cook another minute until cheese melts.

5. Toast the Buns

  • Butter and toast buns face-down in a pan until golden.

6. Assemble the Burgers

  • Spread the creamy sauce on the buns.

  • Stack two patties (if doing double smash), top with crispy bacon.

  • Crown it with the top bun and dig in.
