Cheddar-Stuffed BBQ Bacon Bombs

Ingredients:
1 pound lean ground beef
4 oz sharp cheddar cheese, cut into small cubes
1/2 cup breadcrumbs
1 egg
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
8 slices of bacon
1/2 cup BBQ sauce (your favorite kind)
Optional: chopped parsley or green onion for garnish
Instructions:
1. Preheat oven to 400°F (or heat your grill to medium-high if grilling).
2. In a large bowl, mix the ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper until just combined—don’t overmix.
3. Divide the mixture into 8 equal portions. Flatten each portion in your hand and place a cube of cheddar in the center. Wrap the meat around the cheese to form a ball.
4. Wrap each beef ball with a slice of bacon, securing with toothpicks if needed.
5. Place the bombs on a lined baking sheet or grill-safe tray. Bake or grill for 20–25 minutes, turning halfway through for even cooking.
6. During the last 5 minutes, brush generously with BBQ sauce and continue cooking until bacon is crisp and internal temp hits 160°F.
7. Let rest a couple of minutes, then garnish if you like—and dig in!
