Ingredients:
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
Filling:
16 oz cream cheese, softened
1/2 cup sugar
2 eggs
1 tsp vanilla extract
1/3 cup raspberry jam or puree
Topping (optional):
Fresh raspberries & mint leaves
Instructions:
Preheat oven to 325°F (160°C).
Mix crust ingredients, press into a greased 8×8” pan. Bake for 10 mins.
Beat cream cheese, sugar, eggs, and vanilla until smooth.
Pour over crust. Drop raspberry jam by spoonfuls and swirl with a knife.
Bake 30–35 mins or until center is set. Cool, chill, then top with berries & mint.
