Prep the lobster tails:

Using kitchen shears, cut down the center of the top shell of each lobster tail.

Gently pull the meat out and place it on top of the shell (but still attached at the base). This is called βpiggybackingβ β it helps the meat cook evenly and look amazing.

In a bowl, mix melted butter, minced garlic, paprika, lemon juice, salt, and pepper.

Season the lobster:

Brush the garlic butter generously over the lobster meat.
