📝 Ingredients:
-
4 large onions
-
2 lbs ground beef
-
½ cup bread crumbs
-
1 egg
-
¼ cup milk
-
⅓ cup + 3 tbsp BBQ sauce (divided)
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp salt
-
¼ tsp black pepper
-
8 one-inch cheddar cheese cubes
-
16 slices of bacon
👩🍳 Instructions:
1. Prep the Onions:
-
Peel the onions and slice off the ends.
-
Cut them in half and separate the layers carefully—these will form the outer “shells.”
-
Try to use two layers per bomb, forming a hollow ball when put back together.
2. Make the Meat Mixture:
-
In a large bowl, mix the ground beef, bread crumbs, egg, milk, ⅓ cup BBQ sauce, garlic powder, onion powder, salt, and pepper.
-
Form the mixture into 8 equal meatballs.
3. Stuff with Cheese:
-
Press a cube of cheddar into the center of each meatball and seal the meat around it.
4. Wrap in Onion Shells:
-
Place each meatball between two matching onion layers to form a complete “onion shell.”
5. Wrap in Bacon:
-
Wrap 2 slices of bacon around each onion bomb, securing with toothpicks if needed.
6. Cook:
Option 1: Oven
-
Preheat to 375°F (190°C).
-
Place onion bombs on a foil-lined baking sheet with a rack.
-
Bake for 40–45 minutes until the bacon is crispy and meat is cooked through (internal temp should be 160°F/71°C).
-
In the last 5 minutes, brush with the remaining 3 tbsp BBQ sauce.
Option 2: Grill
-
Set up your grill for indirect heat and cook the bombs over medium heat (350–375°F) for about 40–50 minutes.
-
Brush with BBQ sauce in the last 5–10 minutes.
💣 Tips:
-
Add jalapeños inside for a spicy kick.
-
Use smoked gouda or pepper jack for a twist on the cheese.
-
Serve with extra BBQ sauce on the side!
