Ingredients:
For the Cheddar Bay Biscuit Crust:
1 (11.36 oz) box Red Lobster Cheddar Bay Biscuit Mix
½ cup grated cheddar cheese
¾ cup cold water
2–3 tablespoons olive oil (for spreading dough)
4 tablespoons butter (melted)
Seasoning packet (included in biscuit mix)
For the Toppings:
8 oz boneless, skinless chicken breasts or thighs
1–2 tablespoons Kinder’s Blackened Seasoning (or your favorite seasoning)
1 tablespoon olive oil
8 oz cooked, crumbled bacon
1 (14.5 oz) jar Alfredo sauce (you’ll use about half)
3–4 cups freshly grated mozzarella cheese
Dried parsley flakes (optional, for garnish)
Directions:
Prepare the Crust:
Preheat the oven to 425°F.
In a large bowl, combine the biscuit mix, cold water, and cheddar cheese until a dough forms.
Grease a 10×15-inch rimmed baking sheet with cooking spray or line it with parchment paper.
Rub olive oil on your hands and begin spreading the dough out onto the sheet pan. Reapply oil to your hands as needed to keep the dough from sticking. Press and stretch the dough until it covers the entire pan.
Prebake the crust for 10 minutes, then remove from the oven and set aside.
Cook the Chicken:
Season the chicken with Kinder’s seasoning (or your preferred blend).
Heat 1 tablespoon olive oil in a skillet over medium heat. Add the chicken and cook for 4–5 minutes per side, or until fully cooked.
Transfer the chicken to a plate, let it rest for a couple minutes, then cut into bite-sized pieces.
Assemble the Pizza:
Mix the melted butter with the cheddar bay biscuit seasoning packet. Brush it over the prebaked crust for extra flavor.
Spread about half of the Alfredo sauce evenly over the crust.
Sprinkle 2 cups of mozzarella cheese over the sauce, followed by the cooked chicken and crumbled bacon.
Top with 1 more cup of mozzarella cheese (or more if you like it extra cheesy).
Bake for another 12–15 minutes, or until the cheese is golden brown and bubbly.
Serve:
Slice and serve hot, garnished with dried parsley flakes if desired.
