1/2 cup white rice
1 small potato, cut into wedges
1 tbsp olive oil (for potatoes)
Salt, black pepper, paprika (to taste)
For the stir-fry:
1 cup sliced mushrooms
1/4 red bell pepper, sliced
1/4 green bell pepper, sliced
1/4 onion, chopped
1 garlic clove, minced
1 tbsp olive oil
1 tbsp tomato paste
Salt, pepper, chili flakes (optional)


Toss wedges in olive oil, salt, pepper, and paprika. Bake at 400°F (200°C) for 25–30 minutes. These are crispy golden bites and the perfect clean comfort food.
