Ingredients
1 lb ground beef (or turkey)
1 packet taco seasoning
1 can (15 oz) corn, drained
1 can (15 oz) black beans, drained and rinsed (optional)
2 cups shredded cheese (cheddar or Mexican blend)
1 bag (10-12 oz) tortilla chips
1 cup diced tomatoes (fresh or canned)
1/4 cup sliced green onions
Optional toppings: sour cream, jalapeños, avocado, lettuce
Instructions
Preheat Oven:
Preheat your oven to 350°F (175°C).
Cook the Meat:
In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat. Stir in the taco seasoning and follow package instructions (usually adding water and simmering).
Prepare the Casserole:
In a large baking dish, spread half of the tortilla chips evenly on the bottom. Top with the cooked ground beef, corn, and black beans (if using).
Add Cheese:
Sprinkle half of the shredded cheese over the beef and corn mixture. Add the remaining tortilla chips on top, followed by the rest of the cheese.
Bake:
Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
Garnish:
Once out of the oven, top with diced tomatoes and sliced green onions. Add any additional toppings you like.
Serve:
Serve warm, either directly from the baking dish or in individual bowls, allowing everyone to customize their toppings.
