Coconut Fish Curry

Ingredients:
1 lb white fish (such as cod or tilapia), cut into chunks
1 can (14 oz) coconut milk
1 tbsp curry powder
1 tsp ground cumin
1 tsp turmeric
1 tbsp fish sauce
1 lime, juiced
1 onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
Fresh cilantro for garnish
Cooked jasmine rice for serving
Instructions:
Heat olive oil in a pan over medium heat. Add onion and garlic, cooking until softened, about 5 minutes.
Stir in curry powder, cumin, and turmeric. Cook for 1-2 minutes until fragrant.
Pour in coconut milk and fish sauce, bringing the mixture to a simmer.
Add the fish chunks and cook for 8-10 minutes until the fish is cooked through.
