🍰 Banana Strawberry Cheesecake (No-Bake or Baked Options Included!)

πŸ“ Ingredients:

For the crust:

  • 1 Β½ cups graham cracker crumbs (or digestive biscuits)

  • 1/4 cup sugar

  • 1/2 cup melted butter

For the filling:

  • 2 ripe bananas (mashed)

  • 1 cup fresh strawberries (diced)

  • 16 oz (450g) cream cheese, softened

  • 1/2 cup sugar

  • 1 teaspoon vanilla extract

  • 1 cup heavy cream or whipped topping (Cool Whip)

  • Juice of 1/2 lemon (helps keep banana flavor fresh)

Optional topping:

  • Extra sliced bananas & strawberries

  • Whipped cream

  • Strawberry glaze or jam

Step 1: Make the crust

  1. Mix graham cracker crumbs, sugar, and melted butter in a bowl.

  2. Press into the bottom of a 9-inch springform pan.

  3. Chill in the fridge while you make the filling (10–15 min).

Step 2: Make the filling

  1. In a large bowl, beat cream cheese until smooth.

  2. Add in sugar, vanilla, lemon juice, and mix again.

  3. Fold in mashed banana and diced strawberries.

  4. Gently fold in the whipped cream or whipped topping until well combined.

Step 3: Assemble & chill

  1. Pour the filling into your prepared crust.

  2. Smooth the top and refrigerate for at least 4–6 hours, or overnight, until firm.

  1. Preheat oven to 325Β°F (160Β°C).

  2. After pouring in the filling, bake for 45–50 minutes until set.

  3. Cool completely, then chill for a few hours before serving.

Top with fresh banana slices, strawberries, and a drizzle of strawberry jam or glaze. Add whipped cream if you’re feelin’ extra!
