Mozzarella-Stuffed Onion Rings with Garlic Butter

Ingredients:
2 large onions, cut into 1/2-inch thick rings
8 oz mozzarella cheese, cut into 1/2-inch cubes
1 cup all-purpose flour
2 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 large eggs, beaten
2 cups panko bread crumbs
4 tbsp butter, melted
2 cloves garlic, minced
Vegetable oil, for frying
Directions:
Carefully separate the onion rings. Stuff each ring with a mozzarella cube.
In a shallow dish, combine flour, garlic powder, salt, and pepper.
Dip each stuffed onion ring in the flour mixture, then in the beaten eggs, and finally in the panko bread crumbs, ensuring they are fully coated.
Place the breaded onion rings in the freezer for at least 1 hour.
While the onion rings are chilling, prepare the garlic butter by combining melted butter and minced garlic in a small bowl.
Heat vegetable oil in a large pot or deep fryer to 350°F (175°C).
Fry the onion rings in batches for 2-3 minutes, or until golden brown and the cheese is melted.
Remove the onion rings and place them on a paper towel-lined plate to drain excess oil.
Brush the fried onion rings with garlic butter and serve immediately.
