Poor Man’s Husband Casserole

🧄 Ingredients (as shown):

  • 8 oz egg noodles

  • 1½ lbs ground beef

  • 2 cans (30 oz total) tomato sauce

Optional but recommended additions for flavor:

  • 1 medium onion, chopped

  • 1–2 cloves garlic, minced

  • Salt and pepper to taste

  • 1–2 cups shredded cheese (cheddar or mozzarella, or a mix)

  • Dried Italian herbs or parsley for garnish


👩‍🍳 Instructions:

1. Boil the Noodles:

  • Cook the egg noodles according to package directions until just al dente.

  • Drain and set aside.

2. Cook the Beef Mixture:

  • In a large skillet over medium heat, cook the ground beef (and onion, if using) until browned.

  • Drain excess grease.

  • Add garlic (if using) and cook for another minute.

  • Stir in the tomato sauce. Let it simmer for 5–10 minutes. Add salt, pepper, and herbs to taste.

3. Assemble the Casserole:

  • Preheat oven to 350°F (175°C).

  • In a greased 9×13 baking dish, layer:

    1. Half the noodles

    2. Half the meat sauce

    3. A sprinkle of cheese (if using)

    4. Repeat layers

4. Top & Bake:

  • Finish with a generous layer of shredded cheese on top.

  • Cover with foil and bake for 20 minutes.

  • Remove foil and bake 10 more minutes, until cheese is bubbly and golden.

5. Serve:

  • Let it sit for 5 minutes before slicing.

  • Garnish with parsley or Italian seasoning if desired.


🔥 Tips:

  • You can add sour cream or cream cheese between layers for a richer texture (about ½ cup).

  • Swap beef for ground turkey or sausage if you want a twist.

  • Add veggies like mushrooms or zucchini to bulk it up.
